24Karrot Cake
My now husband and I were ring shopping at our dear friend’s jewelry store, MJ Miller & Co. in Barrington, IL and Mike (our friend and owner), asked if I had a carrot cake recipe because his long time bakery was no longer open. My reply? “Not yet!”. That day I started my quest to make the best carrot cake Mike ever had. After a few stumbles in the kitchen, I perfected what is now known as my “24Karrot Cake”.
This elegant creation is full flavored with spices, toasted pecans, and packed with freshly grated carrots. It’s covered with a tangy, fluffy cream cheese frosting and true to it’s name, topped with 24k gold leaf.
Many thanks go to Mr. Mike Miller, as one of my favorite creations (and favorite pieces of jewelry) wouldn’t be here today if it wasn’t for him.
Lemon Love
It’s not uncommon for someone to cringe when they hear “mother-in-law”. Not me, I was lucky. Rose was one of my biggest fans when it came to my art, keeping her son in line (lol), and every single one of my cakes. Naturally, I had to create something delectable for her. She LOVED all things lemon, so I knew I needed to find the right balance of tart and fresh to make her smile.
Rose’s delicate lemon velvet cake is filled with a scratch made lemon curd, lemon buttercream and frosted with my fluffy vanilla buttercream. As an homage to Rose, it’s topped with a candied lemon peel rose.
I’ll forever miss the “oh my gosh Natalie…that’s BEAUTIFUL!!”….. not because she was complimenting my work itself, but because she truly loved me and anything I created. My hope is this cake brings you just as much joy as it did for Rose.
Chocolate & PB Lover
Caking is not a 9-5 adventure. There are many late nights making sure recipes and décor is up to my standards. And I’ll admit, I’m not always pleasant to be around when things don’t go as planned. One way or another my husband, Rick, is there to make me smile or be my sounding board. He’s also my number one chocolate cake scrap eater and one day he was craving some (it wasn’t a baking day), so he said jokingly “you should make some chocolate cake”. So, I did. Little did he know, I was creating something exquisite for him.
Rick’s decadent chocolate cake is filled with fluffy peanut butter buttercream, whipped semisweet chocolate ganache and frosted with a rich chocolate buttercream. If there wasn’t enough chocolate already, it’s topped with a chocolate ganache drip and chocolate and peanut butter buttercream dollops.
He had no problem with cake scraps, but there definitely was a bigger smile on his face when this beauty was placed on the center of the table. If you have a chocolate and peanut butter lover in your life, this is the cake for them (or just for you… I don’t judge!).
